Easy, healthy spicy stir-fry
Being able to cook healthy, affordable meals at home is a HUGE part of maintaining a healthy weight in college. I’m going to share with you guys a variation of a stir-fry recipe that I just made. I make stir-fry at least once or twice a week because it’s easy, quick, little clean-up and delicious!
What you’ll need:
1 bell pepper, roughly chopped (I usually use half a yellow and half an orange)
Handful roughly chopped onion
3 oz. pre-cooked chicken breast, cut into strips (I like the Tyson Grilled & Ready brand)
Rice, any kind
Low calorie olive oil spray
Soy sauce
Salt and crushed red pepper
While your rice is steaming chop up the bell pepper and onion. Once the rice is 10 minutes away from being done, toss the veggies into a nonstick pan coated with the olive oil spray. Add salt and red pepper to taste (I like mine spicy!). Soften over medium heat for 5 minutes or so. Once the veggies have softened a bit, throw in the chicken and continue cooking until the chicken is heated through. Serve over steamed rice with soy sauce.
Calorie info
Rice (3/4 cup cooked, white) = 150 calories
Veggies = 30 calories
Chicken = 100 calories
Soy sauce + cooking spray = 20 calories
Total: 300 calories
You won’t believe how delicious and filling this is! And it’s only 300 calories for a full plate of food because peppers are so low-calorie. I’m sure this would be great with beef instead of chicken and other vegetables, too. Let me know if you come up with any good combinations. Happy eating!

I’m 5’ 5” and 138 pounds. Highest weight ever was 175 (around Christmas of last year). Lowest weight ever was 102 (junior year of high school, I’m a junior in college now). Goal weight is somewhere between 115 and 125. When I’m closer to my GW I’ll decide on an absolute number.
